Recipe: Homemade Chicken Stock


Ingredients:


  • 250g Chicken bone

  • 750l of cold water

  • 50g onion

  • 25g carrot

  • 25g Celery

  • 1 bay leaf

  • 1 thyme

  • 1 clove

  • 1g or 5pcs white peppercorn


Instructions:


  • Wash & chop the bones into a size approx 8 cm/3 inches in length

  • Rinse bones in cold water

  • Cover bones in cold water

  • Bring the water to a boil

  • Drain the bones and rinse well.

  • Remove fats, skins and clean the pot thoroughly

  • Place bones back into pot, cover with measured water (1.5L) and bring to a boil, add all vegetables and flavouring herbs.

  • Once it starts boiling, bring down the heat to a simmer and skim the scum occasionally to remove impurities.

  • Continuous simmering for 1 to 2 hours

  • Strain all ingredients out
