The Cooking Process


  1. Using a mallet or the back of your knife, pound the pork chop to about 2 cm in thickness. (If using chicken thighs, ensure that the skin is removed and pound to 2 cm thickness)

  2. In a mixing bowl, combine all marinade ingredients, oyster sauce, garlic powder, and cornstarch. 

  3. Add in chicken/pork chops and rub marinade in. Leave to marinade for at least 10mins.

  4. In a sauce pot, gently fry the onions and garlic until soft and aromas start to become fragrant. 

  5. Add in quartered tomatoes and fry till soft, about 2 mins.

  6. Add in ketchup, water, light soy sauce, and sugar, and bring up to a simmer.

  7. Add in potatoes and frozen peas and simmer till soft and the sauce is reduced to a nice, thickened consistency.

  8. To prepare to bread the cutlets, in a dish, combine plain flour and cornstarch.

  9. In a separate dish, crack the eggs and whisk. In a third dish, add the crushed cream crackers.

  10. For breading, place marinated pork chops in the flour mixture first, followed by the whisked egg, 

    Then coat evenly with the crushed cream crackers.

  11. In a frying pan, bring the oil up to temperature. Deep fry the cutlets till the the exterior is golden brown and crispy. Remove once ready, and set aside to rest for 5mins before serving.

  12. You may serve this over a nice plate of steamed rice, either with the sauce on top of the cutlet or by the side
